The Refectorio, once the 900-year-old abbey’s dining hall, is a sanctuary of haute cuisine under the direction of Andoni Luis Aduriz, one of Spain’s superstar chefs whose heralded Mugaritzrestaurant in San Sebastian has Two Michelin Stars. His protégé from Mugaritz, Chef Pablo Montero, oversees not only The Refectorio but all of the hotel’s cuisine day-to-day.
