Bukhara Retains “Best Restaurant in India” Title
NEW DELHI, India, March 7, 2014 – The anticipated second annual S. Pellegrino & Acqua Panna “Asia’s 50 Best Restaurants 2014” list was revealed last week in Singapore at an awards ceremony attended by Asia’s most celebrated chefs and restaurateurs. Two of ITC Hotels’ Luxury Collection flagship restaurants, Bukhara and Dum Pukht, were named to the prestigious list, with just six Indian venues included overall. Bukhara once again ranked highest in the country, maintaining its “Best Restaurant in India” title, while Dum Pukht followed closely behind.
Bukhara
Located in the five-star ITC Maurya in New Delhi, Bukhara has arguably become India’s most famous restaurant, with dignitaries, royals, celebrities and foodies from the world over flocking to the restaurant to sample the rich taste of Tandoori, a regional cuisine of Northwest India. For the last 34 years,Bukhara has been renowned for its traditionally prepared kebabs, which are served without cutlery. Signature dishes like Sikandari Raan (marinated whole leg of spring lamb) and Murgh Malai Kebab (creamy chicken kebab) are prepared under one of India’s top female toques, Manisha Bhasin. Dum Pukht
Dum Pukht translates as ‘to breathe and cook’ and describes a traditional style of Indian cooking that involves slowly roasting and braising kebabs, stews and biryani in a sealed clay pot over a low fire. As meat cooks in its own juices, its natural flavors are intensified.
The ITC Maurya’s restaurant, which specializes in the art of Indian fine dining, is popular for its “Royal Repast,” a set menu of five courses, featuring an exquisite presentation with Shorba, Kebab, Qorma, Qaliya, Salan & Nehari, Naan, Biranj and Meetha.
