The three chefs collaborating on the menu include:
Enrique Olvera: The operator of Moxi Restaurant is widely recognized as Mexico’s leading chef and one of the best in the world. A recipient of numerous culinary awards and kudos, his Mexico City restaurant, Pujol, is #36 on the San Pellegrino list of the World’s 50 Best Restaurants.

Guillermo González Beristáin: After garnering extensive experience internationally, including with Michelin-starred restaurants in France and Spain, he returned to Mexico and opened elegant Pangea. The highly acclaimed Monterrey restaurant serves fine Mexican cuisine enhanced with French-Mediterranean touches.
Diego Hernández Velasco Baquedano: Named one of the most promising chefs of 2011 by Travel + Leisure, his wide range of experience includes stints at both Pujol and Pangea. At Corazon de Tierra (Heart of the Earth), his celebrated restaurant in Baja’s Guadalupe Valley, “the ingredient comes first before all and above all.”

Hotel Matilda hosts Supper Clubs several times each year in Moxi that feature famous guest chefs and original menus and wine pairings. The extravagant events, combined with Chef Olvera’s acclaimed menu in Moxi, have fired a reputation in Mexico for the hotel as a culinary innovator. Moxi for the first time brought a level of culinary sophistication to San Miguel de Allende that parallels the world-class dining of Mexico City.
“With Chef Olvera preparing his evolved and innovative Mexican cuisine, Moxi is now a must-try restaurant among foodies and gourmands,” said Hotel Matilda Director Bruce James. “The menu has a Mexican soul but an international palate, with flavors, textures, combinations and presentations that are subtly familiar yet exuberantly original.”
Hotel Matilda is a dynamic contemporary hotel celebrated for its chic lifestyle-focused guest experience and one-of-a-kind art and culinary events, from exhibits by noted artists to Supper Club culinary evenings. In November 2012, Hotel Matilda was named the #2 hotel in Mexico by Condé Nast Traveler in its Readers’ Choice Awards.
The ‘Matilda lifestyle’ guest experience combines an award-winning holistic spa that was named to Condé Nast Traveler’s 2011 Hot List of the world’s top new spas; a popular lounge known for its creative mixology; designer rooms and suites; a vibrant art-gallery-like interior – the first and only contemporary ambiance in colonial San Miguel de Allende – filled with a eclectic collection of dramatic contemporary works by noted artists, many specifically commissioned for the hotel; and world-class dining by Enrique Olvera in Moxi.
