The gastronomic recognition was achieved less than three years after the hotel opened, thanks to the excellent work by Chef Montero and his kitchen staff.

Chef Montero, who has trained in some of the finest international restaurants, bases his culinary creations on putting a creative, contemporary twist on tradition and the use of locally grown ingredients. The area in which LeDomaine is located boasts a wealth of high-quality culinary delights, allowing for varied menus and superb standards of excellence. Refectorio currently offers two tasting menus which vary with the ingredients available in each season.

The dishes on the menu are impeccably matched with wines produced on the Abadía Retuerta estate, home to some of the region’s finest wines.
Andrés Araya, Managing Director of LeDomaine, said, “We are proud of the fact that in just two and a half years we have received our First Michelin Star. This achievement was always in our plans, as we positioned our hotel as an international culinary epicenter. Today, we would like to celebrate the achievement and continue to share with our customers and friends.”
According to Chef Montero, “This recognition is a reward for the passion, effort and enthusiasm of the Abadía Retuerta LeDomaine team which have brought us this precious award thanks to their daily work ethic and focus on excellence.”
Almost a thousand years ago, the monks that inhabited Abadía Retuerta would gather around the refectory table to share the meager repasts that symbolized monastic life, while they listened to chants of the monk whose task was to turn the act of eating into an exercise in spirituality. Today the setting remains unchanged, although it now houses an exclusive, top-quality restaurant where the leading Sardon de Duero winery is eager to offer lovers of fine foods and wine the chance to enjoy a unique and unforgettable experience. History and gastronomy have blended into one in a new way of uplifting and enriching the spirit. A 17th-century frieze depicting the Last Supper presides over this imposing space.
Besides Refectorio, customers can enjoy the tapas and small plates served at the Vinoteca wine cellar and the cuisine served at Jardin del Claustro, the hotel’s summer restaurant.
Imbued with the charm and lore of a by-gone age, Abadía Retuerta LeDomaine takes guests back in time while immersing them in the comforts and luxuries of today’s most savvy hospitality. The medieval abbey and estate of LeDomaine is a grand travel experience that overwhelms the senses with its enduring history, stately architecture, majestic ambiance, world-class culinary experiences by one of Spain’s most celebrated chefs, acclaimed vineyards and 22 regal accommodations.
Abadía Retuerta LeDomaine opened in 2012 after a complete restoration that sensitively and imaginatively brought the property into the 21st century – and earned it a Europa Nostra Award from the European Union for conserving cultural heritage. Newly opened LeDomaine was the first hotel in Spain to offer a full butler service and the only Spanish establishment included in the 2013 edition of the prestigious Relais & Châteaux hotel and restaurant guide. The hotel is currently converting the original stables into eight new guest rooms and a Spa, which will be completed in 2015.
Hotel Abadía Retuerta LeDomaine closes for the winter from December 1, 2014 until March 1, 2015.
