July 19th, 2011 Chocolais | Gourmet Swiss Chocolate Blended Fine Wine During the past few years, I’ve had the opportunity to taste various chocolate flavored wines… and while I have always enjoyed the experience, I never felt it was extra special. With Chocolais, that has changed. On our 2011 International Food Wine & Travel Writers Association Conference at Sea on Holland America, our members were treated to Chocolais as part of a wine tasting event as well as a bottle in their stateroom to devour or take home and enjoy. After to exceptional tastings of Roche Winery  & Vineyards Estate Chardonnay, we cleansed our palate with “Wine Tasting Cookies” to experience the new to the market Chocolais. It was wonderful and we were lucky it was available in time for our taste testing. We have taken part in chocolate and wine pairings, but not like this. As the producer says, “There’s only one way to improve on the sensual experience of rich dark chocolate with a glass of fine red wine – put them in the same bottle.” That is what has been done when you discover the ingredients. Swiss chocolate, thick Dutch cream, and...

John Thornton went by his own rules. He invested in a winery with a friend. Little did he know, he would one day own the whole operation that would be a family affair with Thornton Winery.  John’s expertise was not in winemaking, but successful business practices and smart investing.   When I asked John about the beginning, his answer was simple. “My wife and I traveled in the U.S., Europe, and the Orient a lot on business, and always tried to enjoy the best food, wine, and music of the area. In the 80s, the opportunity came along...

Hill and Brenda C. Hill Overlook at Rancho La Puerta Recently, the Hill Team returned from one of our favorite spas worldwide, the renowned Rancho La Puerta in Tecate, Mexico., just a short, breathtaking ride south from San Diego. While at “the ranch,” (as the regulars call it,) to present one of our writing workshops, our free time was aimed at refreshing and renewing. Deep breathing with long walks and short hikes was part of every day. Time was also made for swimming, then relaxing in the private roof tub hot tub au natural; indulging in treatments, steam and sauna and a make-up session with excellent products and some valuable tips. Both of us took as many enrichment classes as time allowed. Our day was also filled with dancing, learning new techniques from chefs, and time for solitary meditations. Most pleasant of all, we dined like royalty on the best, fresh, farm-to-fork cuisine from two top chefs and many experienced sous chefs.  We have both written and published two books about notable chefs, so we know when we find true passion in the...
