(Tulum, MEXICO – January 2019)   Headed by award-winning Chef Paul Bentley, Mi Amor’s culinary program broadens its horizons with an exciting program of guest chefs. Featuring star chefs Felipe Donnelly (Colonia Verde), Jesús Escalera (‘Latin America’s Best Pastry Chef 2018’ and creator of delicious and artistically improbable desserts at La Postrería, Guadalajara), Justin Smillie (Upland, New York City) and Christian Page who brings his California casual-food sensibility to Mexico, the series runs through May, with one dinner per month, welcoming diners interested in new urban flavor sensations and fanciful cocktails.

 

Kicked off on January 10 by Felipe Donnelly with a Colombian dinner, the dates and menus for the upcoming months are February 1, Jesús Escalera, a tasting menu based on desserts; April 19, Justin Smillie, a menu of Asian and Italian influences with a California overtone; and May 29, Christian Page, an evening of Mediterranean fare. The background of these chefs rises to the top of any culinary “who’s who” list. Take, for instance, Chef Escalera whose training includes stages at El Bulli with Ferran and Albert Adrià, at El Celler de Can Rosa, and at The Fat Duck. Escalera has turned the pastry world on its head, combining savory and sweet flavors in his pastry-only tasting menus. In New York, Justin Smillie is something of a superstar, too, with a hit restaurant that remains one of the hottest tickets in the city thanks to the artful rusticity of Smillie’s fresh California-influenced cuisine.

 

To complement the “P. Bentley & Friends” dining series, Jasper Soffer of NYC’s acclaimed Mulberry Project has designed an ingredient-driven cocktail program exclusively for Mi Amor, categorized under such headings as Gin & Tonic, Champagne Cocktails, or with fun creations like Sonny & Cher, a tangy mix of tangerine and Aperol. In another artisanal triumph that comes from years of experimentation and knowledgeable mixology, Soffer has drawn inspiration from Mi Amor’s spa and its healing doTERRA oils to develop cocktails that not only refresh but also have a wellness benefit.

Mi Amor’s open-air restaurant celebrates Chef Bentley’s modern bistro fare, a style carefully honed from his early days in Australia and France and his current tour at Guadalajara’s Magno Brasserie, named “The Best Casual Dining in Mexico” by Mexico’s Gourmet AWARDS; Bovine in San Miguel de Allende, selected as one of the best restaurants in Mexico by San Pellegrino’s Culinaria Mexicana 2019; or any of his other five notable restaurants throughout Mexico. Asian-inflected dishes like tuna sashimi with ponzu sauce, shaved avocado and coriander sit side-by-side with grilled blue shrimps, a Mediterranean preparation with charred lemon and aioli; and vegetarian pastas, mixing fresh ingredients and tastes familiar from the Mediterranean. But Mexican influences are not forgotten either and can be enjoyed with the locally sourced fish of the day, served with sikil pak, a Mayan pumpkin seed dip that will make you forget you were ever obsessed with guacamole.

 

The airy setting affords views of the rocks overlooking the ocean and the ocean itself. The sounds of the crashing waves mix with DJ music setting the tone for a casually elegant meal. On request, diners can reserve one of the tables on the rocks themselves, for an outdoor dining experience unlike any other.

 

Mi Amor sits in an enviable location, designed to be romantic yet welcoming to all, and as indulgent as its guests. Architecturally significant rooms overlook either the Caribbean Sea or the hotel’s lush gardens, and many have their own plunge pools. The long infinity pool which seems to stretch into the ocean is a favorite lounging area for guests. Thursday DJ sessions around the pool are the new guest favorite.
