Bukhara revolutionized India’s restaurant industry when it opened its doors in 1978. The venue boldly broke away from typical family-style meals opting instead for a six-page menu and top-notch wait service. It was also a refreshing novelty at the time to be able to eat with your fingers in a five-star restaurant (no utensils are used to this day) and to see chefs cooking; Bukhara was the very first Indian restaurant to have an open kitchen.

Bukhara has become renowned for its traditionally prepared kebabs, which are served without cutlery. Signature dishes like Sikandari Raan (marinated whole leg of spring lamb) and Murgh Malai Kebab (creamy chicken kebab) are prepared under one of India’s top female toques, Manisha Bhasin. The senior executive chef of ITC Maurya strives to create new food combinations while staying faithful to traditional preparation techniques, serving up deliciously unique, yet familiar dishes.

For the first time since opening its doors, Bukhara has unveiled two new menu items to mark this special occasion: a new grilled fish delicacy and roasted vegetable dish.

Reflecting the “Responsible Luxury” credo of ITC Hotels’ Luxury Collection, Bukhara practices a farm-to-fork locavore philosophy, sourcing many restaurant ingredients from within 100 miles of the hotel.

ITC Maurya

The ITC Maurya, a premier luxury hotel in New Delhi with 438 rooms including 25 uniquely-designed suites, has been the preferred residence of visiting heads of state and global business leaders for decades. An imposing structure of timeless luxury, the hotel features architecture inspired by Buddhist stupas and a majestic ambiance that reflects the great Mauryan Dynasty, which created the Golden Age of Indian history. ITC Maurya, which boasts a priceless and exquisite collection of art, is noted for its dome shaped lobby splashed with the stunning “Procession of Life” painting by Krishen Khanna.

One of the most popular dining destinations in the city, ITC Maurya features an assortment of internationally acclaimed cuisines, including the famous Bukhara restaurant. Its Kaya Kalp Spa is a haven of unparalleled peace and indulgence offering an array of traditional Indian- and Western-style therapies, along with lavish hair and beauty services. Situated in the heart of the exclusive Diplomatic Enclave and surrounded by views of New Delhi’s “green belt,” the hotel is a convenient 14 kilometers (25 minutes) from Indira Gandhi International Airport (DEL).
