Bukhara revolutionized India’s restaurant industry when it opened its doors in 1978. The venue boldly broke away from typical family-style meals opting instead for a six-page menu and top-notch wait service. It was also a refreshing novelty at the time to be able to eat with your fingers in a five-star restaurant (no utensils are used to this day) and to see chefs cooking; Bukhara was the very first Indian restaurant to have an open kitchen.
