Arizona Biltmore, A Waldorf Astoria Resort Puts Sizzle in Summer Dining with Innovative Seasonal Menus

PHOENIX, Ariz. – July 23, 2013: The Arizona Biltmore, A Waldorf Astoria Resort (www.arizonabiltmore.com) is turning up the fire on summer dining this year with the introduction of diverse and innovative seasonal menus in Wright’s at The Biltmore, Frank & Albert’s and The Cabana Club – as well as the resort’s first-ever Summer Tea service with a refreshing twist.

Summer Tea:
The Arizona Biltmore has served Afternoon Tea since opening in 1929, but this summer marks the first time the resort is pouring a Summer Tea – with iced rather than hot tea. The service comprises a cold cucumber soup starter to cleanse the palate, a beautifully presented platter of four sandwiches, three desserts and two cakes, and a choice of six iced teas in an array of innovative and exotic flavors. They include Ceylon gold, white ginger pear, blackberry pomegranate, raspberry nectar, lavender citrus and green mango peach. Gluten-free, vegetarian, dairy-free and vegan menu options are available with advance notice. Orchestrating the Summer Tea experience is Tea Sommelier Kevin Doyle. Bringing extensive knowledge in teas and tea service, he welcomes each guest personally, graciously explains the menu, describes the flavors and characteristics of the different teas, and oversees all aspects of the service.Seatings are from 12:00 to 3:00 p.m. The cost is $29, or $39 with the addition of Kir Royale or a Mimosa. Wright’s at The Biltmore:
The Dinner Menu at Wright’s of re-invented classic dishes has been tweaked with light summery options. Try the iced seafood with mignonette tabasco, the scallops Meniere with truffle, cauliflower, yellow corn, capers and parsley, or perhaps tomato-watermelon gazpacho with cucumber, fennel pollen and crème fraiche. The wild salmon en papillote comes with artichoke, heirloom tomato and lemon brulee, the Duck a L’Orange with carrot, ginger and baby bok choy.

Frank & Albert’s:
Breakfast Menu: With the summer breakfast menu, guests will start the day with a bang of flavor. The Biltmore citrus ricotta flap jacks are topped with blueberry compote, maple syrup and vanilla butter, and the Crème Brulee French toast is accented with Captain Crunch cream filling and vanilla honey. The Sonoran Benedict features smoked pork loin, jalapeño corn bread and green chili Hollandaise. The Southwest breakfast bowl juxtaposes fried eggs with plantain, yucca, corn, black beans, vegetable hash and spinach. Or maybe you want to build your own omelet or opt for the breakfast buffet. Lunch Menu: Tasty summer lunch options include Mexican shrimp gazpacho with tomato, pepper, cilantro and avocado; trio salad bruschetta with egg, chicken, tuna and toasted croutons; a variety of salads from Southwestern chicken to Waldorf; tacos with grilled basa or pulled pork and local sweet corn; and crab cake BLT. Dinner Menu: The summer dinner menu reflects the season’s abundance with such dishes as cilantro lime hummus with petite veggies; crispy calamari with crushed red chilies, toasted garlic, lemon zest and pomodoro sauce; tortellini primavera with grilled vegetable ratatouille; pan roasted Chilean seabass with roasted potatoes, baby long beans and Nopales cactus salsa; and such sinful desserts as The Cookie Crumble, with warm chocolate chip cookie, vanilla bean ice cream, and chocolate sauce, and Easy Like “Sundae” Morning with two scoops each of chocolate and vanilla bean ice cream, chocolate sauce, caramel sauce, whipped cream topping, Fruit Loops, Frosted Flakes and Captain Crunch. Also this summer at Frank & Albert’s, a Small Plates menu is offered in the bar area for Happy Hour (4-6 p.m.) including such dishes as mole chicken pizzetta with grilled pita dough, caramelized onions and salsa fresca; short ribs mac ‘n’ cheese with Schreiners bacon and crispy breadcrumbs; and pulled BBQ pork taco with avocado, slaw and salsa.

The Cabana Club:
Poolside Dining: Poolside summer dining at the Paradise Pool is a cornucopia of favorites. Quesadilla choices include roasted chicken quesadilla and burger quesadilla. Among the salads are My Big Fat Greek, with greens, tomatoes, cucumbers, olives, feta and oregano vinaigrette, and Southwestern with greens, corn, peppers, black beans, crunchy tortilla strips and avocado ranch dressing. The New England lobster roll combines Maine lobster salad, celery, red onion and mayo on a hot dog roll. Blackened fish sandwich with Mahi Mahi and Caribbean slaw is on a Brioche bun. The hot dog features a Snake River Kobe Dog and a hand made bun. Plus of course there are wraps, burgers, a kids menu, and even chocolate nachos with brown sugar chips, chocolate sauce, caramel sauce, mini marshmallows and vanilla ice cream.
