Well here we are approaching summersolstice.  Ellen just passed her 75th birthday and is not paying too much attention to her age.  Our garden up on the hill in Rockland, as well as our wonderful hidden garden behind the inn will be on the Rockland Library Garden Tour*on July 7th. We wish they would come right now as everything looks grand.   Patricia has done a wonderful job with all of the summer plantings around the inn, including our lovely window boxes.   By the way, you should all check out our new three day packages.  They are a hoot!  Have fun this summer, and come see us.

Lip Smackin’ Rhubarb Pie
YIELD: one pie

Rhubarb Pie is a big hit with our guests whether rhubarb is in season or in January when we make it for Pies On Parade.  Served with homemade ice cream it’s out of this world!  Rule of thumb:  about 2 pounds of rhubarb per pie, a little less if you’re adding strawberries.

Ingredients
5 cups rhubarb cut into 1/2″  slices
2 cups of sugar
1 tsp freshly grated nutmeg
1/2 cup flour
2 TBSP butter
milk
sugar
a double crust pastry recipe

 

Combine rhubarb, sugar, nutmeg and flour in a large bowl.  Mix well.  Roll the bottom crust and place in 9″ pie pan.  Put the filling in,dot with butter, then top with rolled top crust.  Brush with milk and sprinkle with sugar, then cut air vents in the top crust with a sharp knife.

 

Bake at 450° for 10 minutes then at 350° for 45 to 50 minutes.  Top with homemade ice cream.
